"This hearty soup is a favorite with my family, and a great way to enjoy your veggies."
Ingredients
3 Tablespoons butter
3 Tablespoons flour
1 large onion (chopped)
2-4 cloves garlic (finely chopped)
1 lb. broccoli
1 carrot (grated)
2 cups chicken broth
2 cups milk
1 teaspoon salt
1/8 teaspoon pepper
dash of ground cardamom
Preparation
Steam broccoli until tender.
In a Dutch oven or stockpot, sauté onions in butter over medium heat until translucent. Add flour and garlic and cook while stirring for 1 minute, then add chicken broth, grated carrot, steamed broccoli, salt, pepper and cardamom.
Simmer about 10 minutes. Add milk and bring to slight boil. Turn off heat and blend with immersion blender until smooth. Enjoy!
