Half-hour vegetarian chili

Ingredients

  • 2-3 Tablespoons olive oil

  • 3 onions, chopped

  • Cumin/chili powder to taste

  • 2-5 peppers, chopped (use a variety of sweet or hot peppers)

  • 2-3 pounds of tomatoes, peeled, seeded, and diced

  • 2-4 cloves garlic, finely chopped

  • 2-3 teaspoon cane sugar

  • 2 cans kidney beans (or from dry) or black beans or mix

  • 1/3 cup bulgur

  • ½ cup plain yogurt or sour cream

  • ½ cup chopped green onions

  • ¼ cup chopped cilantro

Preparation


Sauté the first three ingredients in a Dutch oven until onions are tender. Add seasoning, sugar, tomatoes, peppers and garlic. Simmer 10 minutes. Add beans and bulgur and simmer for another 10-15 minutes.


Test for flavor, adding more salt, sugar or seasonings if necessary.


Serve with yogurt or sour cream, green onions, and cilantro.
