Half-hour vegetarian chili

1-3 T olive oil
1-3 t cane sugar
3 onions, chopped
2 cans kidney beans (or from dry) or black beans or mix
2-5 hot peppers, variety, chopped
1/3c bulgur
2-4 cloves garlic, fine chopped
½ c yogurt
Cumin/chili powder to taste
½ c chopped green onions
2-3 lbs tomatoes, peeled, diced
¼ c chopped cilentro
Saute first four in Dutch oven 10 minutes.Add seasoning and tomatoes and simmer 10 minutes.Add beans and bulgur andsimmer another 10-15 minutes.Correct seasoning with salt, cane sugar, and cayenne and serve with remaining ingredients as an optional addition.
