Cilantro Pesto

Ingredients

  • 1 cup loosely packed fresh cilantro leaves

  • 1 cup loosely packed fresh parsley leaves

  • 1/3 cup whole almonds

  • 1 t small fresh chili or ¼-1/2cayenne

  • 2 garlic cloves coarsely chopped

  • 2 T Clover Valley Farms Basil Infused Rhubarb Wine Vinegar

  • 1/4 cup vegetable or olive oil

  • salt and pepper to taste try Clover Valley Farms Garlic Salt! Servings: 4

Instructions

  1. Combine cilantro, parsley, almonds, chili pepper, garlic and vinegar.

  2. Process in a food processor until smooth.

  3. Slowly drizzle in oil with food processor running.

  4. Season with salt and pepper.

Recipe Notes Wonderful on pasta, poultry, pork chops or rabbit!
