Arugula Pesto

2 cups arugula

2 cups spinach

1-2 T Clover Valley Farms Garlic Infused Rhubarb Wine Vinegar

¾ cup grated Parmesan cheese

½ cup olive oil

½ cup pine nuts toasted

salt and pepper to taste

Servings: 4


  1. Blend all ingredients in a food processor until a smooth paste forms.

  2. Add additional olive oil as needed for desired consistency.

  3. Serve with pasta or store in the refrigerator until ready to use.

Serving suggestions:

Try it on chicken, rabbit or as a dipping sauce for crusty bread!
