Cilantro Pesto

Ingredients:

• 1 cup loosely packed fresh cilantro leaves

• 1 cup loosely packed fresh parsley leaves

• 1/3 cup whole almonds

• 1 teaspoon fresh chili chopped or 1/4 to 1/2 teaspoon cayenne powder

• 2 garlic cloves coarsely chopped

• 2 Tablespoon Clover Valley Farms Rhubarb-Basil Vinegar

• 1/4 cup vegetable or olive oil

• salt and pepper to taste (or try Clover Valley Farms Garlic Salt)

Instructions

Combine cilantro, parsley, almonds, chili pepper, garlic and vinegar. Process in a food processor until smooth. Slowly drizzle in oil with food processor running. Season with salt and pepper.
