Cold Cucumber Soup

Ingredients

  • 3-4 med slicing cucumbers

  • 2 Tablespoons chopped fresh dill

  • 2 cloves garlic

  • 1 Tablespoon chopped fresh mint

  • 2 Tablespoons olive oil

  • 1/2 cup chopped walnuts

  • 1/4 teaspoon salt

  • 1 quart plain yogurt

Preparation

Dice cukes and mince garlic, put in glass bowl with oil, salt, dill, mint, and walnuts, let marinate for 2-6 hours. Just before serving, stir in about 1 quart good quality yogurt.
