Ingredients
2 cups flour
¾ cups orange juice
1 tablespoon orange zest
1 cup sugar
2 tablespoon butter
1 ½ teaspoon baking powder
½ teaspoon baking soda
1 egg
1 teaspoon salt
1 ½ cups cranberries, chopped
½ cups walnuts, chopped
Preparation
Preheat oven to 350 F
Mix flour, sugar, baking powder, soda, and salt in bowl. Stir in orange juice, zest, beaten eggs, and melted butter enough to moisten throughout. Fold in cranberries and nuts. Bake in two, 9x5 pans (or 1 larger loaf pan) for 1 hour (or 75 minutes) or in 4 mini loaf pans for 30 minutes.
