Cranberry Bread

2 c flour ¾ c orange juice

1 T orange zest

1 c sugar

2 T butter

1 ½ t baking powder

½ t baking soda

1 egg

1 t salt

1 ½ c chopped cranberries

½ c walnuts, chopped

Mix flour, sugar, baking powder, soda, and salt in bowl. Stir in orange juice, zest, beaten eggs, and melted butter enough to moisten throughout. Fold in cranberries and nuts. Bake in 2, 9x5 pans (or 1 larger loaf pan) at 350F for 1 hour (or 75 minutes) or in 4 mini loaf pans for 30 minutes.
