Select firm fresh heads of garlic (one per person). Peel the outer skin from the upper half of each head. Arrange root end down in a dish, in a single layer. Add water to reach 1/4" up sides of dish, drizzle with olive oil, sprinkle with salt.
Cover tightly with foil, and roast at 375 for 20 minutes, add another drizzle of olive oil and roast uncovered for 5-10 minutes.
It is best served immediately, pull cloves apart and squeeze out the puree. Swerve with grilled bread and goat cheese.
